It’s impossible to eat almond butter stuffed dates without making an inappropriate sound. Yeah. They’re good, especially when they’re drizzled with coconut mana (I loooove this brand). Yep. Total mouthgasm. Quick and simple to make with a healthy spin on an old favorite, these almond butter stuffed dates will hold you over till dinnertime, give you quick energy while on the go, and are perfect as a pre or post workout snack. I pop a few of these while studying to keep my brain working or just when I'm feeling my sweet tooth calling. They're guilt free and delicious.
Almond Butter Stuffed Dates
Making these at home is quick and super simple! All you need are some fresh, ooey gooey dates (I prefer medjool, but any variety will do just fine) and your favorite almond butter (I love THIS one…OMG so good) and a bit of coconut mana to drizzle over the top.
All you have to do is cut down the middle to the pit (don’t cut all the way through!) and remove it. Next, fill the date with almond butter and then drizzle some coconut mana over the top. Feel free to use other toppings like cinnamon, cacao powder, cacao nibs, hemp seeds, raw honey, heck throw in a hunk of good quality chocolate…..whatever you want! Now I know my recipe doesn't have chocolate in it...I know I know! BUT the dates really do offer a delicious sweetness in themselves. Give it a try 🙂 If you do however really need your chocolate fix, either try the chocolate bar I mentioned above or try getting a healthy hazelnut spread to use as a filling with the coconut mana. Pure heaven my friends!
